My hubby has been a trouper and I decided to make him a special dinner tonight. If it wasn't for fall apart mouth watering steak let alone bacon I could probably be swayed towards being vegan. However, throw in the mouth watering succulent steak I am doomed. That being said, dinner tonight started with some bacon grease in my new cast iron enamel dutch oven. Throw in some chopped onion and green beans and you had me at bacon. Still I chopped up some bacon and added it in as well.
Recipe for Southern Green Beans:
1-2 pounds of fresh green beans snapped into 1" pieces
bacon drippings (if you throw your bacon out, you should seriously pray for forgiveness)
1 small chopped onion
1 tsp pepper (or pepper to taste)
1 cup water or broth
chunks of bacon
In the dutch oven I melted my bacon grease. Then added onions for 2 minutes just to where they begin to turn translucent. Add in the green beans, pepper, and bacon chunks and stir to coat for 3-5 more minutes. Add water and bring to boil. Once boiling, cover and simmer on low for 45minutes to an hour.
That being said, my hubby has a bacon complex. Loves it! Sometimes I think more than me. But thats okay. I know how to cook it, not the ready made stuff mind you, the REAL stuff so I know I am safe and wont be left for bacon so long as I prepare it for him every so often. *grins*
On to our main course...
Petite grilled steaks are where its at. Hmm, maybe I am spoiling myself here... oh well, that is what happens when I am left in charge of meal planning and he doesn't give me input. They looked god when I was at the grocery store. So in the cart and home they came.
We picked up some seasoning awhile back at the TAC OH Wooster Rally called "Bone Suckin Sauce'" Love this stuff. So I rubbed it on both sides and now they are hanging out chilling on the counter.
While the steaks were warming up to room temp. it gave me some time to prep an Ancient Sweets red pepper to be roasted on the grill as well. Slice off top, slice down the sides and peel out the guts. Drizzle some olive oil and add a shake or two of sea salt and they are ready for roasting. Ancient Sweets red peppers have 427% of vitamin C! Holy crap thats alot!
So here is the final product of my slaving over my hubby's meal. No, he isn't spoiled at all! /sarcasm

portobello mushroom steaks
When out grocery shopping and trying to stay away from carbs & wheat it is sometimes difficult to find something with protein that isn't chicken or red meat and pork gets old fast too. Since I try not to eat fish I am somewhat limited since pastas are out. When looking over the produce in our local market, the portobello mushrooms looked yummy. Since I wasn't sure what to make as a side dish, I decided to dress them up a bit.
What I did was scraped the gills out and drizzled our shrooms with some extra virgin olive oil. I put them on the grill, gill side down for 5 minutes on high heat. Just enough to get them a bit crispy. Once they were flipped over, I topped them with chunky salsa and mozzarella cheese and turned the heat down to medium for about another 5 - 10 minutes (depending on how done you want them)
I was looking or the cheese to be melted an bubbly at this point and the entire mushroom to be more fleshy than firm.
To the dinner plate, I added french fries and cottage cheese for the hubster and cottage cheese & pineapple chunks for me. It was yummy!!
