When out grocery shopping and trying to stay away from carbs & wheat it is sometimes difficult to find something with protein that isn't chicken or red meat and pork gets old fast too. Since I try not to eat fish I am somewhat limited since pastas are out. When looking over the produce in our local market, the portobello mushrooms looked yummy. Since I wasn't sure what to make as a side dish, I decided to dress them up a bit.
What I did was scraped the gills out and drizzled our shrooms with some extra virgin olive oil. I put them on the grill, gill side down for 5 minutes on high heat. Just enough to get them a bit crispy. Once they were flipped over, I topped them with chunky salsa and mozzarella cheese and turned the heat down to medium for about another 5 - 10 minutes (depending on how done you want them)
I was looking or the cheese to be melted an bubbly at this point and the entire mushroom to be more fleshy than firm.
To the dinner plate, I added french fries and cottage cheese for the hubster and cottage cheese & pineapple chunks for me. It was yummy!!
