The easiest Beef stroganoff out there & Nutella french toast

Good morning peeps! I hope everyone is doing well this chilly morning and have all remembered to fall the clocks back. :) So I was too tired yesterday to blog anything since it was my bday week as well as weekend I have been working hard on not having to make our dinner much this wee. Which means not much to blog. But I have been cooking for the neighbors. So today you get a 2 for 1.

Saturday:
So we had munchkins out begging for candy but we had many do tricks for us to get their candy. 1 piece for just saying trick or treat, 2 pieces for doing a trick for us. lol. It was AWESOME. haha. Totally made our afternoon since they had moved trick or treat from Wed. evening 6-8:30 to Sat. from 2-3:30. 2:00 in the AFTERNOON, WTF?! In the afternoon?! Who wants to trick or treat in the afternoon? BORING. Not only is it hard to tell who is passing out candy, many people have plans or things going on during a Saturday afternoon. Trick or treat needs to be in the evening for the scare factor and then one can tell by house lights who is passing out candy. :) mwahahahaha. Okay, so moving on to dinner. After we had the burial ceremony for Uncle Steve, we came home and commenced in the passing out of candy, teasing the neighbors, and having kids do tricks for their treats. Mom & Dad's neighbors stopped by for their special treats and of course did extra tricks for more candy. While they were over, they took advantage of our displays and posed the monsters for a fun photo. Once it was all said and done, we passed out maybe 70 or so pieces of candy, when usually we would go through 3-4, 70 piece bags of candy. Craziness.

 So then it was on to dinner. Before we had headed off to the cemetery, I had the foresight to start dinner in the crockpot. Go me! So for dinner we were preparing beef stroganoff.  It was extremely easy! Sorry, no pictures of this because the neighbors got it all, I was treated to Mexican for dinner. :)

Beef Stroganoff:
3 pounds cubed stew meat
2 cans Condensed Mushroom Soup
1 largish onion diced OR 2 TBSP minced dry onion
3 TBSP of Worcestershire
1/2 cup water
8 oz of cream cheese
1 tsp ground black pepper
1 tsp minced garlic
1 tsp paprika

1. Put your liner in the crockpot.
2. Mix all ingredients EXCEPT beef & cream cheese
3. Add beef once all ingredients are well mixed
Cook on Low for 8 hours. Cut up the cream cheese into cubes. Stir the cream cheese in until all combined. You might have to put the lid back on and leave for 5-10 minutes. Serve over egg noodles.

YUMMO!

So this was amazing after a long day out in the cold. It was hot and required little effort to get on the table. :) Enjoy!

Sunday:
 Last night the hubby decided instead of eggs & toast (which will probably be served tomorrow) he would like french toast. Well, who likes plain old french toast? No sense of imagination there. Humph! So I gave it a bit of a swift kick and OMG its my new favorite thing. haha. We scarfed it so fast pictures are limited to the one remaining since we were both completely STUFFED!

Stuffed Nutella French Toast:

Dip:
6 Eggs
1/2 cup Milk
2 TBSP Cinnamon
1 TBSP Nutmeg
1 tsp ground Pepper
1 tsp ground Sea Salt

Filling:
Nutella
Cream Cheese (you will never know its there!)

1. Warm griddle to 375 degrees
2. Blend with wire whisk all "dip" ingredients together.
3. Assemble sandwiches:
     - 1 slice of bread with cream cheese on one side
     - 1 slice of bread with nutella on one side
     - close sandwiches by putting cream cheese against peanut butter
4. Dip completed sandwich into "dip" then flip to cover both outside pieces of bread that are explosed
5. Place onto hot griddle. Flip after about 60 seconds or until golden brown.
