So I have been craving a taco bell pizza this is as close as I could get and 1 was enough for each of us.
1 pound ground beef leanest you can find
1/2 of a medium sweet onion diced up
1 packet of taco seasoning or your favorite mix
1 can refried beans
1 14oz jar tostitos salsa or homemade salsa
1 cup shredded cheese (I used mexican blend)
8- 9in flour tortillas
your choice of toppings:
Roma Tomatoes (diced)
Green Onions (cut up)
Black Olives (diced)
Directions:
Preheat oven to 350 degrees. Cook onions in skillet until translucent then brown
ground beef in skillet. Add in taco seasoning and 1/4 of the salsa. Drain if needed. Spray baking
sheet with non stick cooking spray. Lay one tortilla on sheet. Spread
with beans, then, with meat. Cover with second tortilla. Bake for 10 minutes.
Remove from oven. Spread top tortilla with salsa, then top with cheese and roma tomatoes, green onions, black olives . Bake an additional 5-10 minutes or until cheese is melted
completely. Cool slightly before cutting.
